So yesterday I wasn't having the best of days and decided to bake. I have a few friends that would make fun of me for baking all the time but I'm sure they really just wish they could hop on a plane and drive to my tiny town and come eat it with me.
I found this recipe on Pinterest (my new obsession) and since I'm a huge fan of anything lime I decided to try them out.
They were super easy to make and so delicious.. but SO rich.. It's very hard to finish one of them because you end up being so full.
I'm going to have to bring them to work so I don't end up eating them all haha.
You will need:
- 1 & 1/2 cups of graham cracker crumbs
- 6 tablespoons of melted butter
- zest of one lime
- 1/4 cup of white sugar
- 1/2 cup of lime juice (I used the real thing.. so it took me 3 limes to squeeze out 1/2 cup)
- 14 oz of low fat sweetened condensed milk (This took me one and half cans of it)
- 2 egg yolks
Preheat oven to 350 and grease a 8" baking pan, line with parchment paper and leave a bit hanging from the sides and combine graham cracker crumbs, sugar, butter and zest and put in pan making sure that 1 inch remains on the sides
Bake for 10 minutes
When crust is cool, combine condensed milk, yolks, and lime juice and mix until thick.
Pour into pan and make sure it is evenly distributed
Bake for 15 minutes and let sit for 1 hour or overnight.
Carefully take it out by holding the parchment paper and place on a cutting board
cut up and serve!
